Instant Pot Cornbread Bites with Lemon

Beyond the taste, what I love about these little cornbread bites is the size. Perfect for stacking together while warm and served as part of a meal or eaten as a light snack or breakfast. 

The lemon in the recipe gives the cornbread a fresh light flavor that makes it one of my go-to favorite cornbread recipes. If you are looking for something more substantial, we also have a full cornbread loaf recipe packed with corn, peppers and cheddar cheese. But this recipe, due to its simplicity, is definitely a must try!

Instant Pot Cornbread Bites

We use the Silicon Molds made for baking bites in the Instant Pot. Our favorite mold comes with a lid that fits on and is easy to use. 

The other benefit is time. These cornbread bites are ready to serve in about 30 minutes.

Instant Pot Cornbread Bites with Lemon

Lemony Cornbread Bites

Instant Pot Cornbread Bites with Lemon - a twist on classic cornbread that gives the bread a light refreshing hint of citrus.

  • 1/2 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1 Tablespoon lemon juice
  • 1/2 cup half and half
  • 1 large egg
  • 2 Tablespoons Sugar
  • 1/4 cup melted butter + for greasing molds


In a small glass or ceramic container, add the lemon juice to the half and half and allow it to sit for 5 minutes.

Combine the cornmeal, flour, salt and baking powder in a medium bowl.

In a separate bowl, combine the melted butter, eggs and sugar.

Add the half and half mixture to the butter, egg and sugar mixture.

Add the wet ingredients to the dry, 1/3 of the wet mixture at a time.

Fill each greased silicon mold about 3/4 of the way fill to allow space for the batter to rise.

Cover the mold with the manufacturers provided lid, or foil.

Put 1 cup of water in the Instant Pot

Place the silicon mold on a trivet (with arms or one with a sling made from folding a 14" piece of foil over twice).

Set the pot to "Manual" or "High" for 10 minutes. Make sure that the valve is set to "Sealing."

When the cooking time is over, perform a manual release and remove the dots from the Instant Pot.

Allow the bread to rest for 10 minutes before removing from the pan.

Best served warm.
